Twenty years in the making
King Carlos Coffee started in 2002. Founder Carlos trained as a chef at Star City under Paul Henessey and Ramael Scully before opening his first espresso bar, then running cafes across Hurstville and the Sydney CBD.
He moved into roasting after one too many letdowns from wholesalers, building a roastery run by someone who had spent years on the other side of the counter. That history is the reason Build Your Own Blend exists. We have spent two decades learning what makes a great cup, and this hands that craft to the people drinking it.

Why we built it
Most roasters sell you their blends. We wanted to hand you ours. For years the only people who could order a coffee built to their taste were the cafes, restaurants and hotels we supply.
Build Your Own Blend opens that door to everyone. Whether you want something sweet and forgiving for milk, or bright and fruit-forward for filter, you can build it, and we will roast it the same way we roast for our 80+ partners across the country.
