What it tastes like
Santa Monica is sweet and juicy in a way that catches people off guard. You get ripe lulo (a bright South American fruit), a squeeze of lime and a caramel-meets-condensed-milk sweetness that lingers. It is clean, lively and more than a little moreish.
It is the kind of single origin that turns a sceptic into a filter-coffee fan.
Fermented with fruit
This is a Pink Bourbon grown by Jairo Arcila at Villarazo. What makes it special is the processing. The coffee goes through a 72-hour anaerobic natural fermentation with lulo fruit, then dries slowly on raised beds.
That fruit-forward process is exactly where the lulo and caramel notes come from. It earned a Silver medal in 2024, and it is a great example of how processing can reshape a cup.
How to brew it
Brew it black to show off the fruit and sweetness. A pour-over with a medium grind is perfect, letting the lulo, lime and caramel land in sequence.
An AeroPress works well too if you want something quicker. Either way, keep it black.
