Produced by Jairo Arcila at Villarazo Farm in Colombia’s Armenia, Quindio region, this limited release Pink Bourbon undergoes a meticulous 72-hour dry anaerobic fermentation – with lulo fruit added for a signature tropical complexity.
After fermentation, the cherries were pulped and dried on raised beds over volcanic ash soil to lock in nuanced flavour. This is a 100% Pink Bourbon varietal – a rare, evolving cultivar currently studied for its unique mutation origins in Huila.
