A Rigorous Journey to Perfection
Each cherry is carefully handpicked to ensure only the ripest are selected. Following harvest, the cherries undergo a thorough sorting process with a lavador machine, distinguishing the denser, quality beans from the rest. Sun-dried on patios for three days and then mechanically dried for over 72 hours, the beans reach the ideal moisture level, locking in the unique flavors and aromas.
